Roskilly's Jersey cows graze freely in the meadows round the farm; their diet of lush grass produces the creamiest organic milk, which they turn into clotted cream in the farm's kitchen. They then take the trays of rich cream to the fudge room. Here, their contents are spooned into vats of golden fudge to create traditional melt-in-the-mouth cubes. Some fudge batches are flavoured before they are poured into moulds - organic stem ginger, for example - while other batches are flavoured only with rich clotted cream. Nothing else is needed.
